In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
Add the egg, vanilla extract, and almond extract to the butter mixture. Beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, add a few drops of red food coloring and mix until evenly distributed.
Divide the dough into two equal parts, shape each into a disc, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour.
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Use a heart-shaped cookie cutter to cut out cookies and place them on the prepared baking sheets.
Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Decorate with sprinkles or icing if desired. Enjoy!
