Prepare the pickled vegetables: Mix julienned carrot and daikon with rice vinegar, sugar, and salt. Let it sit for at least 15 minutes.
Slice the baguette lengthwise, leaving one side attached. Lightly toast it until crispy.
Spread a thin layer of pâté on one side of the baguette and mayonnaise on the other side.
Layer the meats: Start with pork belly or grilled pork, then add slices of Vietnamese ham.
Add the pickled vegetables, cucumber slices, cilantro, and chili (if using).
