Heat oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.
Add the meat chunks and brown on all sides, about 5-7 minutes. Season with salt and black pepper.
Stir in the diced tomatoes, tomato paste, cayenne pepper, and smoked paprika. Cook for another 5 minutes until the tomatoes soften.
Add the chopped bell pepper, carrots, and sweet potato. Stir well to combine with the meat and spices.
Pour in the broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 30 minutes.
Stir in the peanut butter until fully dissolved. Simmer uncovered for another 10-15 minutes until the stew thickens.
Taste and adjust seasoning if needed. Garnish with fresh cilantro or parsley before serving.
