Instructions

1

Heat oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2

Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.

3

Add the meat chunks and brown on all sides, about 5-7 minutes. Season with salt and black pepper.

4

Stir in the diced tomatoes, tomato paste, cayenne pepper, and smoked paprika. Cook for another 5 minutes until the tomatoes soften.

5

Add the chopped bell pepper, carrots, and sweet potato. Stir well to combine with the meat and spices.

6

Pour in the broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 30 minutes.

7

Stir in the peanut butter until fully dissolved. Simmer uncovered for another 10-15 minutes until the stew thickens.

8

Taste and adjust seasoning if needed. Garnish with fresh cilantro or parsley before serving.

Chef's Tips

  • Protein Variations: You can use lamb, goat, or even tofu for a vegetarian version.
  • Peanut Butter Tip: Use natural, unsweetened peanut butter for the most authentic flavor.
  • Spice Level: Adjust cayenne pepper to control the heat—add more for extra spice or omit for a milder taste.
  • Serving Suggestion: Maafe is traditionally served with rice, couscous, or fufu.
  • Storage: Leftovers can be refrigerated for up to 3 days or frozen for longer storage. Reheat gently on the stove.
