Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Peel the sweet potatoes and cut them into even-sized fries, about 1/4 to 1/2 inch thick.
In a large bowl, toss the sweet potato fries with olive oil until evenly coated.
In a small bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Sprinkle the spice mixture over the fries and toss to coat evenly.
Spread the fries in a single layer on the prepared baking sheet, making sure they are not touching each other.
Bake for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.
