Prepare the kimchi: Drain the kimchi and chop it into small pieces. If using gochujang, mix it with the kimchi for extra spice.
Butter the bread: Spread softened butter evenly on one side of each bread slice. This will help achieve a crispy, golden exterior.
Assemble the sandwich: Place one slice of bread butter-side down in a cold skillet. Layer half the cheese, then the kimchi, and then the remaining cheese. Top with the second slice of bread, butter-side up.
Cook the sandwich: Heat the skillet over medium-low heat. Cook for 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
Flip and cook: Carefully flip the sandwich using a spatula. Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
Serve: Remove from the skillet, let it cool for a minute, then slice and serve immediately while hot and crispy.
