Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels to ensure crispy skin.
Season the chicken thighs generously with salt and black pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-6 minutes until the skin is golden and crispy.
Flip the chicken thighs and cook for another 3-4 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium. Add minced garlic, ginger, and red pepper flakes. Sauté for 30 seconds until fragrant.
Stir in honey, soy sauce, and apple cider vinegar. Simmer for 2-3 minutes until the sauce slightly thickens.
Return the chicken thighs to the skillet, skin-side up, and spoon the glaze over them. Transfer the skillet to the oven and bake for 10 minutes.
Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
