Prepare the pickled vegetables: Combine shredded carrots and daikon with vinegar, sugar, and salt. Let sit for at least 15 minutes.
Slice the baguette lengthwise, leaving one side attached. Lightly toast it for extra crispiness.
Spread mayonnaise on both sides of the baguette. Drizzle with soy sauce and Maggi seasoning.
Layer the pork belly or grilled pork inside the baguette.
Add pickled carrots and daikon, cucumber slices, cilantro, and jalapeño (if using).
Drizzle with lime juice, close the sandwich, and press lightly. Slice in half and serve immediately.
