Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or cooking spray.
In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess fat and set aside.
In the same skillet, sauté the diced onions and bell peppers until softened, about 3-4 minutes. Remove from heat.
In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
Layer the cubed bread evenly in the prepared baking dish. Top with cooked sausage, sautéed vegetables, and shredded cheese.
Pour the egg mixture evenly over the layers in the baking dish. Press down lightly to ensure all bread is soaked.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the center is set.
Let the casserole cool for 5 minutes before slicing and serving.
