Instructions

1

Preheat the oven to 180°C (350°F). Heat the oil in a large pan over medium heat and sauté the onion until soft.

2

Add the minced meat to the pan and cook until browned, breaking it up with a spoon as it cooks.

3

Squeeze the excess milk from the soaked bread and add the bread to the meat mixture. Stir well.

4

Add the curry powder, apricot jam, vinegar, grated apple, and raisins to the pan. Mix thoroughly and cook for another 5 minutes.

5

Transfer the meat mixture to a greased baking dish and smooth the top with a spoon.

6

In a bowl, beat the eggs with the milk and pour over the meat mixture. Place the bay leaf on top.

7

Bake in the preheated oven for 30-40 minutes, or until the topping is set and golden brown.

Chef's Tips

  • Meat Choice: Traditionally, lamb is used, but beef or a mix of both works well too.
  • Spice Level: Adjust the amount of curry powder to suit your taste preference.
  • Soaking Bread: Ensure the bread is well-soaked but not dripping wet for the best texture.
  • Serving Suggestion: Serve with yellow rice and a side of chutney for an authentic experience.
  • Leftovers: Bobotie tastes even better the next day as the flavors meld together.
