In a large bowl, mix flour, sugar, baking powder, cardamom, and salt until well combined.
In another bowl, whisk together coconut milk, egg, and melted butter.
Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms. Knead lightly for 2-3 minutes.
Cover the dough with a damp cloth and let it rest for 15 minutes.
Divide the dough into small portions and roll each into a ball. Flatten slightly and cut into triangles or desired shapes.
Heat oil in a deep pan over medium heat. Fry the mandazi in batches until golden brown on both sides, about 2-3 minutes per side.
Drain on paper towels and serve warm.
